Yeah, this has nothing to do with Siri... Siri was released in 2011, long before LLMs were even vaguely "on the cards"—even before the seminal Hinton paper that shifted everyone's focus to Deep Learning...

In fact, an LLM paper from Apple a couple of years ago led directly to RWKV, which is arguably the best Transformer variant out there. So they may still have a significant part to play. They're just a very different company to Google/OpenAI/Meta.
